Whiskey at the Steakhouse: A Guide to Flavor, Pairings & the Perfect Pour

Some things simply belong together. A perfectly cooked steak, good company and a well-crafted whiskey.

At Merrill & Houston's Steak Joint, whiskey isn't just another drink on the menu, it's part of the experience. There’s a right pour for every situation; celebrating a milestone, closing a business deal or enjoying a quiet evening out.

Like a great steak, great whiskey is built on patience. Time spent aging in oak barrels creates layers of caramel, vanilla, spice and smoke that can't be rushed. That same respect for craftsmanship is what drives our kitchen every day: selecting quality cuts to grilling each steak with care.

The pairing is a natural one. A rich bourbon complements the marbling of a ribeye. A bold rye stands up beautifully to a New York Strip. A smooth single malt brings out the delicate flavor of a filet. The goal isn't to let one overpower the other, it's to let both shine.

Featured Whiskey Pairings

Looking to elevate your next steakhouse experience? Our featured whiskey pairings are carefully selected to complement some of our signature entrées.

J. Henry Bellefontaine Cognac Finish Wisconsin Bourbon paired with our 12 oz. House Brined Pork Tomahawk offers rich caramel and oak notes that enhance the pork's savory flavor.

Penelope American Light 18-Year Bourbon pairs beautifully with our 10 oz. Filet, bringing smooth vanilla and toasted oak to every bite.

Auchentoshan 12-Year Single Malt Scotch is an excellent match for The Cowboy, balancing its bold richness with a smooth, citrus-forward finish.

Whiskey enthusiasts can also enjoy a limited selection of allocated bourbons, including E.H. Taylor Cured Oak and Elmer T. Lee, available while supplies last. Ask your server about our current selections and featured pairings.

And there are no rules for how to enjoy it. Sip your whiskey neat, over a single cube of ice or in a classic Old Fashioned. What matters most is taking your time.

The best evenings aren't measured by how quickly dinner ends, but they're remembered for the conversation, the laughter around the table and the final sip that lingers just a little longer.

At Merrill & Houston's, that's what a great steakhouse experience is all about.
